Ham and Egg Cups

Nothing says protein-packed pick-me-up like a protein cupcake for breakfast! Well, technically it isn't a cupcake, but close enough. I've seen a version of this on popular health and fitness blogs (e.g. Blogilates LOL) and decided to create my own rendition of it!

I used really simple ingredients that can probably be found in your average household refrigerator, so this is really easy and fuss-free to make! What better way to start your day than with a hearty yet healthy breakfast!

What you will need:
(makes one)

2 slices of ham (I used apple-baked ham, but I'd recommend deli ham)
grated cheese (or, you could shred regular Kraft cheese like I did, haha!)
an egg
butter/non-stick cooking oil spray


1. Butter/Spray your muffin tin 

2. Fit your ham into the mould, and try to get a flower shape. It might be a bit difficult to achieve this if your ham is rather ~rigid~ like mine was :( This is why I recommend deli ham as it's easier to fit it around the mould!

3. Add cheese to the base of your "muffin liner" (ham)

4. Crack an egg into the middle of the "flower"

5. Add more cheese!

Note: You may also wish to add a small spoonful of cream on the top to further enhance the flavour. Vegetables such as bell papers and broccoli can also be added into your cupcake!

6. Bake in the oven for about 15 minutes, at 200°C, or until the egg white is set.

My ham wasn't thick/sturdy enough to hold ann the egg, so parts of the white leaked out of the cup! No matter, though, since it was all baked anyway. The only bad thing is that some of the egg whites got stuck onto the tin, as seen in the photo above. But you can easily use a spoon and eat up all that protein so it doesn't go to waste. :-) being baked with the ham, there was a pleasant tinge of salt in the otherwise bland egg white!
