Chocolate Chip Cookie Dough Brownies

An impromptu decision to bake led my friend Su Ann and I to whip up these chocolate chip cookie dough brownie bars for ourselves (and friends, of I personally LOVE chocolate chip cookie dough, especially in the Häagen Dazs ice-cream! So I was pretty excited when she found a recipe online for these brownies. After looking through it, we decided to tweak it to suit our personal preferences! (and also our domestic situation haha)

The brownie bars turned out pretty fine, in my opinion! The brownie has the strong bitter taste of chocolate (well, that actually depends on the grade of chocolate you use) which is sweetened out by the cookie dough layer which is essentially diabetes in a square. It's super easy to make, and we took only a little more than an hour! (excluding chilling time for the layers to set)

What you will need:
(feeds 20 comfortably)

a three-quarter cup of unsalted butter
one and a half cups of chocolate chips (I used Ghirardelli 60% chocolate buttons)
one cup of granulated white sugar
half a cup of brown sugar
one teaspoon of vanilla extract
half a teaspoon of salt
one cup of all-purpose flour
three eggs

Cookie dough:
one cup of all-purpose flour
a three-quarter cup of unsalted butter
a three-quarter cup of granulated white sugar
a three-quarter cup of brown sugar
two tablespoons of milk
a quarter of a teaspoon of salt
one and a half teaspoons of vanilla extract
one cup of miniature chocolate chips (I used leftovers from the brownie batter!)


1. Preheat the oven to ~175°C and grease your desired baking tray with butter or oil (I used olive oil)

2. Add the chocolate chips and butter to a microwave-safe bowl and microwave at "Medium-Low" heat at 30 second intervals, mixing after each round. Melt the chocolate and butter till a thickish consistency is achieved.

2. Whisk in the sugars, eggs, vanilla extract then salt in this order, making sure you have a homogeneous (ish) mixture after each round!

3. Sift the flour into the mixture.

if you looked carefully, we marbled "DONE" onto our brownie...but it didn't stay there after baking

4. Transfer the brownie batter onto your greased pan.

5. Bake for 20-25 minutes!

6. Place the brownies in the fridge for about five to ten minutes to chill it.

Cookie dough:

1. Combine the butter, sugars and salt in a large bowl and mix until soft and creamy (1 to 2 minutes using an electric mixer, 10 minutes using hand hahaha) ((don't worry I washed and dried my hands))

2. Mix in the milk and vanilla extract, followed by the flour until combined.

3. Stir in the chocolate chips and mix well

Combining the two layers:

Spread the cookie dough on top of the brownie. This is easiest to do if the brownie is chilled and firm. Wet your hands slightly to pat the cookie dough on top in an even layer. Sprinkle additional chocolate chips if you'd like, for additional aesthetic appeal. ;-)

Chill the brownies for about two hours, or leave them overnight in the fridge.
